Lemon rice is a very simple south indian variety rice where you just add cooked rice with tempering and a dash of lemon. It can be made in a jiffy.. A main course which can be eating just like that or with chips chutney or a side dish of your choice.
Mustard seeds – 1 tsp
Channa dal – 1 tsp
Green chillies – 2 slit
Ginger – 1 inch (Finely chopped)
Turmeric powder – 1 tsp
Oil for tempering
Lemon juice of 2 lemons
Cooked Rice – 2 cups
First take a wide kadai.. Add oil. Once oil gets hot, add mustard seeds. Once they splutter, add channa dal, slit green chillies, chopped ginger and saute till dal turns golden brown. Now add curry leaves and turmeric powder and give it a good mix.
In a wide basin add cooked rice and let it cool down.. Add the required amount of salt. Once they are cooled mix it along with the tempering.. Combine it well.. Add lemon juice and mix everything well..
Serve it as it is or with Potato Onion Roast or chips or chutney or any side dish of your choice. A quick and easy recipe. Enjoy!!
